Four Enduring Truths
Enduring Truths About Self Interest
We are self interested. When we sacrifice for others, even this is motivated by our own desires. Those desires include good feelings and wanting to see or make the world the way we want it to be. Forget this, and we become bitter trying to "do the right thing." In order to avoid this bitterness that comes with "duty", we need to see how being a good person and doing the right thing is just self interest.
We can also point out the self-interest of others when we want to correct their behavior. Tell a man he's wrong, and it isn't usually enough to change his behavior. It's better to show him his true interest - that behaving in a better way is better for HIM. Don't forget the normal and healthy self-interest in dealing with others AND with yourself.
Enduring Truths About Mistakes
Salvador Dali said, "Have no fear of perfection. You'll never reach it." Maybe you see this as negativity, but recognizing the truth is never a negative act. We all make mistakes. The greatest man or woman alive - whoever he or she is - has done some stupid things.
This isn't an attack on human greatness, but a recognition that it isn't dependent on doing things perfectly. Perfectionists certainly suffer for their demands upon themselves, while others hesitate to act for fear of mistakes. Accept that making mistakes is normal, and don't dwell on the the possibility or the reality of those mistakes. As Lao Tzu says, "Do your work, then step back - The only path to serenity."
Enduring Truths About Learning
Our mistakes give us a chance to learn, and so avoid even bigger mistakes. Of course, we also can learn from our successes, and from the successes of others. Why not view mistakes and successes - both our own and others - as the great opportunities they are. Just seize that chance to learn more and so live better.
Enduring Truths About Change
Probably you have seen people that appear to learn nothing from their mistakes, right? Haven't you also known and read about those who turned their lives around? A less important truth is that people often don't change. The far more important truth to remember, and the most important of these enduring truths, is that we CAN change.

7 Layer Bean Dip
Anyhow, the dip. It's a really easy one to throw together and is perfect for a party. It's not something you can really make ahead, unless you omit the guacamole. And I'd suggest you don't omit the guacamole. What the 7 layers are that you use is completely up to you. This is just my favorite way. But feel free to change it up with any ingredients you like: green onions, some taco seasoning, add ground beef, use salsa instead of tomatoes, add diced green chilies, add Spanish rice. . .
Ingredients:
1 can refried beans
1/2 cup sour cream
1/4 large red onion, diced
1 recipe guacamole
1 Roma tomato, chopped
1/2 can whole pitted black olives, chopped
cheddar cheese, shredded
Spread refried beans onto the bottom of the dish (I used my 8x8 casserole dish, which works out perfectly), then the guacamole and sour cream. Then layer the remaining ingredients on however you like and top with shredded cheddar cheese.
You can cover with plastic wrap and chill it for 15 minutes or so if you like. Serve with chips. Or it's good enough to just eat with a spoon straight from the dish. Not that I've ever done that or anything.

Guacamole
One of my favorite things to make is guacamole. I've tried so many brands of pre-made guac, and I have never been impressed. Not only unimpressed but YUCK comes to mind as well. Stay far away from the pre-made ones over by the dairy section. If you must buy pre-made, Sam's Club has a pretty decent guac. But I highly recommend making your own -- there's just no substitute for the wonderful flavor.
Random side note: I had an avocado left over the other day and whipped up a half-batch of guac. Because I'd only had guac 2 days that week, which is definitely not enough times. Anyway, my 2 year old came up to me in the kitchen and begged for a taste. I gave it to her, watching closely for the upchuck reflex I was sure to follow, but this girl loved it! She and I inhaled the entire batch in less than 5 minutes. It was hysterical. Who knew?
Another random side note: while we're talking about Sam's Club, they have a bag of 6 avocados for under $6, which is a way better deal than anywhere else I've ever seen. So I suggest you buy that. What to do with the extra avocados, you ask? If you buy that big bag, you'll have the perfect excuse to invite some friends over and make Cayenne Rubbed Chicken with Avocado Salsa!
The last time I made this recipe (pictured), I didn't use the optional ingredients because I was making it as part of a dip (recipe coming Friday!) that has those ingredients in it already. But if I'm just making guac by itself, I always add them in.
Not used to working with avocados? We've got ya covered!
Ingredients:
2 ripe avocados
1 large clove garlic (or 2 smaller cloves)
1 tablespoon mayonnaise
1 tablespoon lime juice
salt and pepper, to taste
Optional (but very yummy):
1 Roma tomato
1/4 small red onion, cut into large pieces
cilantro
Place garlic clove(s) into a food processor and pulse until very fine. If you're using the optional onion and cilantro, add it to food processor now, pulsing until evenly chopped. Add avocado to food processor and pulse until smooth. If you're using the optional tomato, add it to the food processor now. Then add mayonnaise, lime juice and salt and pepper. Give it a quick little pulse to combine everything well. Garnish with leftover cilantro or even parsley, if you have that on hand.

April's No Bake Cheesecake
April’s No Bake Cheesecake
1- 8 oz package pkg. cream cheese
1 can sweetened condensed milk
1/3 cup fresh or bottled lemon juice
1 tsp vanilla extract
1- 9 inch crumb crust
1- can prepared pie filling (any flavor you want)
1. Soften cream cheese to room temperature**; whip until fluffy.
2. Gradually add sweetened condense milk; mix until well blended.
3. Add lemon juice and vanilla extract; blend well.
4. Pour into pie crust; chill 2-3 hours (best overnight)
5. Garnish with pie filling.
**To soften cream cheese right out of the fridge just unwrap it and put it in a microwave safe bowl. Microwave 8 seconds at a time until you can poke your finger through it :)**

Together Again
What a wonderful day and beginning of a tremendous year. After five long months of separation here we are together again sharing crabcakes at the Raven, strolling the Boardwalk of Virginia Beach, and visiting the Heritage Center. I wish you all the sense of tranquility I feel today.
