Rice Krispies Treats

Alright, I don't know a single person who hasn't made rice krispies treats before. You can find this recipe on pretty much any box of Rice Krispies Cereal. And the best part is it's super easy (as you probably know) and so much fun to let the kids help with.

Rice Krispies Treats



½ stick margarine
6 cups rice krispies cereal
Marshmallows… lots, of marshmallows. (4 cups minimum but I probably use 6)

Grease 9x13 pan.


Measure cereal into large bowl.


Melt margarine


and add marshmallows.


Stir until marshmallows are melted.


Pour marshmallow mixture into cereal


and mix well.


Spread into 9x13 pan. Allow to cool.


We added mini chocolate chips to ours.


Cut into squares and enjoy!

Italian Pasta Salad

I have a few different versions of pasta salad that I like to make. Pasta salad is so easy and so versatile. It's a very easy way to use up ingredients from your fridge. You can throw in anything you want really - leftover diced chicken, artichoke hearts, bell peppers, green onions, diced red or yellow onion, tomatoes, broccoli, carrots, anything. This isn't so much a recipe as it is a method.

Ingredients:
16 ounces of tri-colored rotini
2 avocados, diced
1 cup cheese (I used mozzarella, but I don't think it had enough sharpness to it, so next time I think I'll try feta. If you do use feta, please don't use an entire cup of it! :) )
2 tomatoes, diced (or you can use a can of petite diced tomatoes)
olives (either 3/4 can of whole pitted olives that you cut in half or 2 small cans of the pre-chopped kind)
1/2 cup grated parmesan
1/2 bottle of Italian dressing
salt and pepper, to taste



Cook pasta according to package directions. Run cold water over pasta to cool it off. Or, if you're in a hurry, fill a large bowl with water and ice and submerge your colander into the ice bath. Combine cooled pasta, Italian dressing, cheeses, olives and tomatoes in a large bowl until well combined. Taste for seasonings, adding salt and pepper, if needed. Gently fold in avocado. Chill for about an hour before serving.

Easy Corn Bread

This is the perfect compliment to any delicious bowl of chili. I will post my fabulous chili recipe one day soon. I hope you enjoy this simple corn bread recipe. It's delicious!


Easy Corn Bread
(recipe from cooks.com)

1 1/4 c all-purpose flour
3/4 c cornmeal
1/4 c sugar
2 tsp baking powder
1/2 tsp salt
1 c. skim milk
1/4 c vegetable oil
1 egg, beaten

Heat oven to 400 degrees F. Grease 8 or 9 inch square pan. Combine dry ingredients. Stir in milk, oil, and egg until moistened. Pour into pan. Bake 20-25 minutes or until golden brown.

Does Having a Successful Career Always Translate to Living a Successful Life?

This question came up strong in my mind last weekend when I met a successful stock investment consultant who was obviously not living a life that can be said to be successful.

He told me how good his job was paying him and helping him to live good in terms of been able to provide for his needs and that of his family. He was appreciated by his employers and his clients for his profound knowledge and ability to recommend profitable stocks. There is no doubt that he was having a successful career, which was heading for even greater successes in the near future.

Anyone would have considered him extremely lucky to be in such a lucrative career and wished they had his life and success. But beneath the seeming success of this fellow is a great pain and a feeling of emptiness. The success he has labored to achieve in his career has in no way reflected in his life, for he is an unhappy man.

When I inquired why he was feeling this way, he opened up and told me there was nothing he loved more than to work with his hands. He deeply loves art and to craft materials into beautiful items. That's what gives him joy and fulfilment. And that's where he can truly see his life as been successful.

By the time he showed me some items he crated with beads, I didn't need any further clue to understand why he never considered himself living a successful life with stock investment consultancy - they were simply gorgeous!

This man is certainly not alone living this kind of life. In fact, millions of people all over the world who may seem to be successful in their careers actually live a life of sadness, depression and frustration. But how is it possible for someone not to live a successful life, in spite of being successful on their job? you may want to know.

The not so obvious reason for this is that a lot of people do not know their values in life. They don't know what they really want their life to be. They easily get influenced by their environment, friends, colleagues, television, parents, etc., and then make choices, which they would eventually come to find don't lead them to a successful life.

To ensure a successful life, and avoid falling into this pit of lifelong sadness, or to lift oneself from it and take position to walk through the success pathway of life, we should right away begin to take control of our lives. We must not allow our choices to be dictated to us by external influences, but from our values, which are what we really want in life.

Your success in life is in your own hand. Write out your present values [because our values may change after sometime] according to how they are important to you and make every decision based on it, including your career choice and goals, your heath, partners, etc.

can help us to find true and lasting success in life if we make it a habit to always consider it whenever we have to make a decision that could affect our lives.

For instance, if your topmost life value is Family as in the above list, to experience inner peace, fulfilment and joy therefore, which undoubtedly sum up to living a successful life, you will decline any engagement that would take you away from your family for long, whatever benefits it may provide. Failure to heed this would be walking in the opposite side of living a successful life.

Reeses Peanut Butter Cake

I'm not the dessert fanatic that April is, so it'll be very rare that I'll post a dessert recipe at all. I'm admittedly extremely strange and don't love sweets at all. In fact, I actually hate (yes, hate) chocolate. Like I said, extremely strange. But I made this for dessert the other night for the fam, and they all loved it.

The original recipe was a much longer process that involved doing all these odd things to make the cake actually look like a Reeses Peanut Butter Cup. I don't care about having fluted, fancy edges, so I shortened the recipe. The original recipe also called for 2 cups of powdered sugar, but I thought that was way too much, so I reduced it quite a bit. But you may want more.

This is enough batter to make 2 cakes out of. Let me warn you that this cake is extremely rich, so I'm not sure if you'll want to make the full 2 cakes. I just made 1 regular sized cake and then dumped the rest of the batter, and it took my husband and 3 kids about 4 days to finish off the cake. Maybe we're just a house full of weirdos, though? :)

Ingredients:
1 box of chocolate cake mix
1 cup butter
1 cup peanut butter
1/2 cup powdered sugar
1 1/3 cups graham cracker crumbs
1 bag milk chocolate chips
3 tablespoons shortening

Prepare cake mix according to directions on box. Let cool, then freeze for about a half hour. Meanwhile, combine butter and peanut butter in a medium sauce pan over medium heat until combined. Stir in powdered sugar and graham cracker crumbs.

When peanut butter sauce is finished, remove cake from freezer. Spread peanut butter sauce evenly over the top of the cake. Put back into the freezer for a few minutes to allow the sauce to set. Meanwhile, in a medium sized, microwave safe bowl, melt chocolate chips and shortening, stirring every 30 seconds, until well combined. Remove cake from the freezer, and then evenly spread the chocolate sauce all over the top and sides of the cake. Put cake into the fridge until ready to serve.

You'll want to take the cake out of the fridge probably 10 minutes before you're ready to eat it to allow the chocolate to warm up just a bit, otherwise it's kind of hard to cut. Make sure you have a nice, cold, tall glass of milk handy! Enjoy!

Baked Potato Soup

This is one of those delicious recipes that you can make any time you want something just so....well... yummy! My mom found this recipe in a magazine once and it became an instant hit at our house. It freezes well so you can keep serving sizes in your freezer to heat up for a warm lunch or quick dinner. It would also be a great dinner to share with someone else, like a sick neighbor or friend. The pictures really don't do it justice, it's thick and creamy, and delicious. The last one ended up blurry, sorry about that.


Baked Potato Soup (8-10 servings)

2/3 cup margarine
7 Cups milk
Onion
1 ¼ cups shredded cheddar cheese
¾ tsp salt
2/3 cup flour
4 lg potatoes, baked, cooled, cubed
12 bacon strips, cook and crumble
8 oz sour cream
½ tsp pepper



Melt butter, stir in flour.



Gradually add milk, stir until thick.



Add potatoes and onion.



Boil, stirring constantly. Reduce heat; simmer 10 minutes.



Add remaining ingredients.



Remove from heat and stir until cheese is melted.



Enjoy!
